Although the heat wave may have been and gone we are not banishing our Barbeques to the shed just yet. Although we may be doing it under the cover of a raincoat there is still the opportunity to cook lots of delicious food in the garden, impressing your friends with more than just a boring burger. Here are a couple of recipes that are very simple and very yummy.
Garlic Prawn Skewers
To make 6 skewers:
- 200grams Prawns
- 2/3 cloves of Garlic (depending your preference)
- One whole Lemon
- A hand full of fresh Basil
- Lots of olive oil
- Salt
- Pepper
- 6 small wooden skewers/ can use chopsticks instead
Start by thoroughly washing all the prawns and placing in a shallow bowl, cover the prawns with olive oil. Crush the garlic and add to the mixture with a generous squeeze of lemon juice. Chop the basil into tiny pieces and mix in. Add a good sprinkle of the salt and pepper and use your hand to mix thoroughly. If possible cover and leave the mixture in the fridge. When your barbeque is ready push about 8 prawns onto each skewer and grill away!
Grilled Lemon Seabass
To feed 4 people
- A medium sized Seabass gutted and washed
- 2 whole lemons
- Sea Salt
- 1Â small bunch of chopped parsley, stalks trimmed and kept
- A good slurp of olive oil
After ensuring the Sea Bass is properly prepared lay it out on a long dish. Chop the lemon into thin slices and place inside the fish, squeeze the juice of the other lemon all over the skin of the fish and rub in. Place the parsley stalks inside with the lemon, chop the leaves very small and sprinkle over the skin with lots of olive oil. Lastly, add the sea salt over and inside the fish. Place the fish on a sheet of kitchen foil and curl up the sides, don’t cover completely because the fish must be turned whilst cooking. Barbeque on both sides until the meat is white. This is great served with a potato salad and cherry tomatoes.
